First, you are asking 2 different questions, one about Psy and the other is on FM. For the first, you need to get an obse in any institute or with any Psychaitrist, that could be a hospital or a clinic. As you know an observer in this field is a guranteed USCE and will be accepted by many programs simply because Psy doesn't need you to examin a patient or do any interventions.
In case of FM, well, we're talking about a different setting; Here you need to have a wide range of patient care, preferebly in a hospital or a big center as the PDs will look for the ones who had "hands-on" experience in the US, saying that, Obse are considered as USCE in many programs. Try to reach a nearby hospital, preferably a one with a residency, where you can build a good relationship with your attendings.
I know your main question is about research, but I believe if you do the above for a period of 3-6 months then you will seal a good deal in the specialty and the place you want. It will be hard, needs sacrifice financially and physically but.. hell it worth it. GL

is a research experience better than a couple of months' observership? n isnt it binding to remain attached to that research position once we get it? what if we match and have to leave in between?

That depends the research position you are holding. Research contracts can go from 3 months to a year, that is when they pay you. If you are a volunteer, you may leave whenever you need to. Research is only better than observership if you get to publish something or if you work with someone that really helps you get a position by people this person knows. The experience is good, but for PDs, USCE is better than research
